Menu Plan Monday (a day early)

Last week I ended up not cooking two of the days I had planned to. Tuesday we went out to dinner and Thursday my mom invited us over and she cooked. Last night we had Jon's birthday party and everyone had a great time. I stuck to my menu for the rest of the week, just switching things around based on time each day.

Here is my plan for this week. It is a short one because we are headed up to Maine on Thursday and I don't know how we will share the meal planning and cooking up there with Jon's family.

Breakfasts-
cereal
waffles
fruit

Lunches-
mac and cheese
grilled cheese
turkey sandwiches

Dinners

Monday- Breakfast for dinner. A family favorite! Homemade pancakes, eggs, strawberries and sausage. Total cost for 4= $4

Tuesday- Turkey Empanadas Grande with homemade dough - $5.50 for four servings

Wednesday- Shrimp stir fry (this is a great meal to clean out the veggies from the fridge before we leave for the weekend)- total cost for 4= $6

Breaking it down

I read a few blogs about saving money and eating frugally but well. On all of them they list out how much each meal costs. It got me thinking about how much each of my meals cost. I know that based on my grocery bill they cannot be all that high. But for this week I broke it down day by day for dinners of what I have made so far:
Monday- blts- 1/2 lb of bacon= 90 cents (at $1.87/lb) one tomato= 85 cents (at $1.79/lb) lettuce= 25 cents ($1.29 a head) and bread=50 cents(at $1 a loaf) which equals $2.50 to feed three of us
Tuesday- chicken parm- 3/4 lb of chicken=$1.50 ($1.79/lb) 1/2 lb of cheese= $2.50 (at $5/lb) 3/4 jar of pasta sauce= 75 cents ($1 a jar) and a 1/2 bag of brocolli=50 cents (at $1 per frozen bag) which equals $5.25
Wednesday- chicken nuggets, french fries and mixed veggies. I can't total this one out becuase I have the monster bag of chicken nuggets and don't know how much each nugget cost. But I'll bet that it was under $5!
Thursday- empenadas- 3/4 lb of ground beef= $2.50 (at $3.01/lb), 1/2 bell pepper= $1, 1/2 onion=50 cents, tomato= 50 cents, pie crust=79 cents, seasonings=25 cents for a total of $5.59.
Friday- crockpot mac and cheese- 1/4 lb of macorini= 50 cents, 2 cups of cheese= $1.50 (cheese ends bought at my deli), 2 cups of milk=75 cents, 1 egg= 10 cents equals $2.85!

So far not bad. All my meals seem to equal out around $5. Some will be more expensive and some are cheaper. But I am okay with feeding us for that amount.

Now this was not my original meal plan. But with the water main break yesterday things got thrown off. And today a friend stopped by and I didn't get a chance to throw my mac and cheese together early enough. But that is okay! I have not made any extra trips to the store AND I am not letting anything go bad. Those are my two biggest goals. Oh yeah, I am feeding my family fairly healthy meals.

meal plan check in

We are not doing so well with the meal planning this week. Last night was supposed to be brinner (breakfast for dinner-Scrubs terminology) and it ended up being nachos. Tonight was supposed to be pasta with sausage and it ended up being hamburgers and brocolli and strawberries. Now, in a sense we are not doing bad. I am not buying extra food, we are not making any extra trips to the store. When I substitute I either use something else in the house or we switch nights. Tonight the switch happened because husband wanted to use the grill (it was a balmy 45 degrees in new england) so I said make hamburgers which have been in the freezer for about three or four months now.
Tomorrow might be pasta and sausage, or it might be brinner. I work tomorrow and husband is SUPPOSED to make dinner. In the two weeks since I have started my job this has yet to happen. Maybe tomorrow will be a new beginning. Miracles happen right?

On a different note- I hate teething. I love my rugrats but teething it no fun. Big rugrat never showed any issues with it until her molars came in. Little rugrat is getting his fourth tooth and the poor little guy is soooooooooooo incredibly needy. He just wants to be on my hip. All. Day. Long. And he is 20 lbs, no little lightweight here. (Big rugrat weights in at a large 26lbs at 3 years and little rugrat weighs in at about 20 lbs at 9 months. Yup.)

Off to bed, 6:30 am comes quickly around here.
