Menu Plan Monday

Although for many this is a short week for many, for me as a stay at home mom there is no such thing as a short week! My part time job is Monday and Tuesday so I don't enjoy the benefit of a holiday from it, but I can't complain since I only work 10 hours a week. And Jon will be home for the second part of the week which will make things easier, but my "jobs" around the house will still exist. Added to that having everyone home more of the time makes for more cleaning for me. Nope, not a short week for me!

I am keeping the menu simple since we will have a HUGE dinner on Thursday and although I am not cooking we will bring home lots of leftovers since my mom always makes a ton of food. If you have ideas for leftover turkey please share them with me! Jon will live off of turkey sandwiches but I can only eat so many. I will be looking for new ideas using leftover turkey and possibly freezing some dinners.

Meals for the week:

Monday- leftovers (we have quite a few in the fridge and need the room for the pies and the leftovers to come!)

Tuesday- Pasta. Jon always requests that I put this on the menu for one of his nights. The kids like it and it is easy for him to make. He just adds butter and paremesian cheese for Madeline and Owen.

Wednesday- empenadas. This is a favorite of Jon's. The only change I make from the recipe is to make my own pie crust.

Thursday- Thanksgiving! My mom is cooking and I am in charge of dessert. I am making an apple pie and a pumpkin pie.

Friday- turkey melts. We need to use some of that leftover turkey!

Saturday- keilbasa and rice

Sunday- tilapia for Jon and I and fish sticks for Madeline and Owen

In addition to keeping the menu simple this week I planned a menu that would allow me to "shop" in my freezer for ideas. Because I did this I was able to spend our grocery budget on a lot of stockpile items. Big Y had a great buy one get two free sale on ground turkey and ground chicken. I took advantage of the prices- $1.34 a pound for the ground turkey and $1 a pound for the ground chicken. They also had buy one get one free on the tilapia. I got two packages for the freezer.
