Menu Plan Monday

Yes I always post this on Sunday because my menu is made up on Friday. Plus if I don't post it on Sunday then I forget about it!
So here it is for this week:

Breakfasts:
cereal and fruit
homemade blueberry muffins
frozen waffles and fruit
eggs and toast

Lunches-
turkey sandwiches
mac and cheese
grilled cheese and bugs on a log
fish sticks and carrots
leftovers

Dinners:
Monday- sloppy joes and corn on the cob
Tuesday- chicken and veggie quesadillas with homemade salsa (recipe below)
Wednesday- baked potato soup in the crockpot
Thursday- Heather's Chicken Bruschetta Pasta I found this on someone's meal plan from last week and it looks soooooooo good I have to try it
Friday- BLTs
Saturday- grilled chicken quarters and green beans
Sunday- hot dogs and hamburgers on the grill (a weekly summer staple)

Homemade salsa recipe:
16 ounces of diced tomatoes (fresh or canned)
1/2 of a small onion (you can use more if you like)
1 t lime juice (I usually forget this and it still comes out great!)
2 T of chipolte seasoning (I get mine from Tupperware, strange that they sell seasonings but they do!)

Chop onion (I use a handheld chopper). Add in tomoatoes, lime juice, seasonings. Put the lid on and continue to mix. Open up and you have fresh salsa. yummy!

-If you stock up on canned tomatoes when they are on sale this can be a super cheap salsa to make

Your meals sound delicious. I'm definitely going to try the salsa, we have an overabundance of tomatos and I've been looking for different recipes.

I definitely MUST have sloppy joes next week, so many people had them this week and I am envious :)
