Menu Plan Monday

We did a really good job of sticking with our menu last week. I switched up the nights a little, but stuck to the same menu with the exception of the soup. I did not end up trying it, intsead I slipped in a leftovers night because we had WAY too many! We still have a lot of leftovers so we will be having another one of those nights this week as well.

Monday- leftover night. I will take leftovers to work and Jon and the kids will eat some at home.

Tuesday- empenadas with homemade pie crust. One of Jon's favorite meals that we have not had in awhile. The spicy beef rollup reminded us of them last week.

Wednesday- ground turkey meatloaf (planned leftovers for Friday night)

Thursday- brinner for the kids- homemade waffles from the freezer, scrambled eggs and sausages. Most likely leftovers or sandwiches for Jon and I.

Friday- meatloaf subs with leftover meatloaf from Wednesday. It is a suggestion I found in Womans Day magazine.

Saturday- Shells from the freezer with ceaser salad

Sunday- homemade pizza with ceasar salad. Princess castle cake (will post pictures after I make this one) and ice cream for dessert to celebrate Madeline's fourth birthday!

Our breakfasts are cereal and/or taost with fruit each day. For lunch we eat macaroni and cheese, chicken nuggets, fish sticks, grilled cheese, peanut butter and jelly, and hot dogs which I pair with a veggie and a fruit each day. I keep meals during the day simple, the kids like it and it makes my life easier as well.

Friday night I treated myself to pancakes since the hubby and teen were out working.
It's Saturday and I'm enjoying some MPM blog visiting while watching "Barney Miller" on Hulu.com.
It's time to expand my recipe sources with some new ideas.
