I cannot remember the last time I posted a weekly menu plan. But since my goal for the new year is to being saving more I am going to try to be better about planning and STICKING to a meal plan. I make a plan each week, but I am not always good about following it.
For this week I opened my refrigerator, freezer and pantry to see what I have (no more assuming on ingredients after the two dinner debocles this week). Then I used the sales flyers to fill in the missing pieces.
This is what I came up with:
Monday- scrambled eggs with leftover ham and cheese, blueberry pancakes (homemade, using frozen blueberries) and sausage
Tuesday- nachos (with leftover taco meat from the freezer)
Wednesday- crockpot Italian porkchops and frozen veggies
Thursday- grilled cheese sandiwches with chicken noodle soup and tomato soup (the kids don't like tomato soup and I need to make two cans anyway)
Friday- meatloaf (made with ground turkey) and veggies
Saturday- we have a birthday party for my niece in Eastern MA, we will grab something fast food on the way home since we will be traveling 2 hours each way
Sunday- pasta and meatballs
For lunch we eat things like grilled cheese, mac and cheese, chicken nuggets and pb&j. Always something easy and I always throw in a fruit or veggie along with it. Breakfasts are bowls of cereal, slices of fruit, or frozen waffles and sausage.
