This weekend I realized that February is almost over. Where did it go? The end of the month signals that is is time for my monthly meal planning. I sat down with Pinterest, I'm an Organizing Junkie's Menu Plan Mondays and the trusted recipes that we all love and planned out the month. We are staying with some favorites but I am planning in 5 new meals this month (at about 1 per week). Hopefully the family will like them!
This week's menu-
yogurt with fruit
pepperoni and cheese sandwiches (Owen's go-to lunch for school these days)
peanut butter and jelly
macaroni and cheese
ham and cheese
avocado and chicken salad sandwiches
*all served with fruit, baby carrots or apple sauce
Monday- Breakfast for dinner including hard boiled eggs, pancakes and apple slices
Tuesday- Baked sweet and sour chicken with rice and broccoli. I found this recipe through Pinterest and I could eat an entire pan by myself.
Wednesday- Chicken and cheese quesadillas with corn. I bought whole wheat tortillas this week, hopefully the family goes for them.
Thursday- Roasting chicken (78 cents a pound this week!) and green beans
Friday- Grilled pizza sandwiches. I am going to make French bread in the bread maker to use for the sandwiches.
Saturday- Clean eating taquitos using leftover chicken from Thursday. I found these on pinterest and I am very excited to try them!
Sunday- Mini meatloaves and mixed vegetables. I plan to make a double batch of mini meatloaves and freeze half for a night when I don't have time or don't feel like cooking.
